The video is not speed up and most gw2 player would not be able to pull it off like that. it requires quite some skill to get that good at flying a griffon. (can dive to get momentum/speed. momentum can be lost when flying up again or for a longer time on the same height, can flap to gain very little height, can flap while diving to get max
When you get too low, pull up and flap to get back up. You can also keep flying horizontally much, much longer on water. There's a stream vod somewhere that explains the mechanics in depth, could try and dig it up for you. It's a hell of a mount, seems like something from a singleplayer game. Infinite learning curve.
